Caro was born on a slow August afternoon on Crete — the kind that stretches past siesta into golden hour.

Chapter one

The pod

The carob tree (Ceratonia siliqua) has grown wild along the Mediterranean coast for over 4,000 years. Its pods are naturally sweet, iron-rich, and — remarkably — completely caffeine-free. On Crete, they were fed to horses, roasted for flour, and steeped as a poor man's chocolate. Everywhere else, they were mostly forgotten.

We started Caro because that felt like a mistake.

Chapter two

The roast

Our pods are harvested by a small cooperative on Crete, where they roast them low and slow — 40 minutes at 140°C — and grind them within 48 hours. Nothing added, nothing extracted.

What we believe

The best rituals are the small ones — repeated daily, with intention, in beautiful things.

Naturally, always

No sweeteners, no fillers, no flavoring. Just what the pod already tastes like.

Slower than we should

We ship weekly, not daily. Every batch is roasted, ground, and packed by hand.
